Wild Thyme Flowers
These Wild Thyme Flowers only grow in specific areas of the Mediterranean and are hard to find even at well-informed spice shops in Greece. The harvest is incredibly labour intensive, due to its geographical location across rocky coastlines and every blossom is trimmed one by one. Allowing for the preservation of the herb's aroma much longer.
With your food
Use for brining chicken, marinating lamb, or pickling vegetables. You could add a couple of thyme blossoms in your herbal tea infusions as well: they pair well with peppermint, and have a digestive, antiseptic, and antioxidant properties.
How to use
Crumble with your palms or fingers before use. You’ll need 2-3 blossoms per portion. Floral and tingling, this thyme is best friends with lemon, garlic, and olive oil. A combination capable of taking plain roasted potatoes to another level.

From a small workshop under the Acropolis Hill of Athens, focused on bringing agricultural qualities from all over Greece to the hands of many. Evangelia and her team at Dapnhis & Chloe scour through every nook and corner of Greece's mainland and islands. They partner with really small organic farmers and cultivators, who produce the most incredible indigenous herbs. Their efforts have resulted in farmers believing in the forgotten, heirloom varieties and couldn't be happier to see these efforts cross borders outside of Greece.
