Kefi Origins ingredients

Groceries

  • Borlotti beans
  • Cauliflower/Squash
  • Celery
  • Red onion
  • Leek
  • Tomato
  • Carrots
  • Peas
  • Zucchini
  • Bay leaves
  • Potato
  • Water
  • Salt / Pepper

Method

  1. Prepare all your veggies, cut in cubes/slices: potato, tomato, carrot, squash, leek, onion, celery, zucchini. It’s a lot of cutting, but it’s worth it!
  2. Heat pan and add Extra Virgin Olive Oil, add your onion, carrot, leek, celery
  3. Once sautéed, add your rosemary and bay leaves, followed by your beans (if uncooked. If pre-cooked, add them last)
  4. Add layer of water (finger thick) to cover what’s in your pot. Bring back to boil.
  5. Wait 2min, then add your squash/cauliflower.
  6. Add layer of water (finger thick) to cover what’s in your pot. Bring back to boil.
  7. Wait 2min, then add your potato.
  8. Add layer of water (finger thick) to cover what’s in your pot. Bring back to boil.
  9. Wait 2min, add your zucchini
  10. Add layer of water (finger thick) to cover what’s in your pot. Bring back to boil.
  11. Wait 25min for the soup to come together.
  12. Add peas and tomato, salt/pepper
  13. Cook another 2-4min and you’re done!
  14. Serve with a splash of any Kefi Origins extra virgin olive oil
